Hotbox Tacos was started in 2019 in the kitchen of owner and founder Louis Rios. A trip to Mexico where he and his wife Co- founder Jessica Rios got to try Birria and other types of tacos at local food carts in town. That's when Louis came back inspired to bring some of the street food eats back to the states and create Hotbox Tacos. I started cooking for people and having them try my food and I was getting really good feedback, so I decided it was time to invest in myself, I have a passion to cook food and to bring parts of my culture to you through my food!
Hotbox Tacos is a Modern Mexican Eats food cart based out Holland MI. We offer a unique experience you won't find anywhere else along with the quality of products we offer.
Tijuana style birria
The exact parameters of Tijuana-style birria, a regional version of the classic Jalisciense party dish of slow-cooked meat served in its juices, are imprecise but the broad strokes are simple.
The birria is made with beef and the broth is heavily spiced and bright red from an array of chiles. It's served mostly in antojito form — as tacos, mulitas, quesadillas, vampiros — and splashed with consomé, which you can also get on the side.
